Jeronimo Coffee is a micro roastery in Aalsmeer that takes coffee seriously, but not in a pretentious way. They work with people who are as obsessed with coffee as they are, and they want you to actually understand what you're drinking. So besides roasting beans, they share info on different brewing methods. It's less "here's your latte, bye" and more "let's nerd out about extraction for a sec." Sustainability isn't just a buzzword here. They use an induction roaster and solar energy, send things in CO2-neutral packaging, and even give their coffee chaff and jute bags to a local rose nursery for compost and reuse. Waste gets a second life, which is a pretty solid flex. They also back some real causes. Part of their coffee comes from a region in Uganda where they helped fund malaria protection for farming families.
