Ichi-E

Ichi-E is a Japanese restaurant in Amsterdam Zuidoost, right on the Johan Cruijff Boulevard. The name comes from the concept of ichi-go, ichi-e: one moment, one meeting. The whole idea is that every visit is its own thing, not a repeat of the last one. They treat each encounter with guests as something unique, and the food and service are built around that mindset. It's a sushibar and restaurant, so you're here for the Japanese kitchen. There's also a Densha Lounge, which gives the place a bit more range than your standard sushi spot. They're open Monday through Saturday from noon to 22:30, and Sunday from 12:30. Last kitchen order is at 22:00, so don't roll in at 22:15 expecting a full meal. What makes it worth a visit is less about hype and more about the approach. They're not just serving food, they're trying to create a moment that doesn't happen twice. If you're in the area and want Japanese food that actually cares about the experience, this is a solid pick.
