Triptyque is run by Niven Kunz and Virginie van Bronckhorst-Kunz, and it’s not your average neighborhood spot. The kitchen is built around local products, with some fresh flavors from abroad thrown in for good measure. That’s it. No fuss, just respect for the ingredients. It’s got a Michelin star, ranks 24th among the best vegetable restaurants in the world, and was named vegetable restaurant of 2026 in the Gault & Millau guide. So yeah, the veggies are kind of a big deal here. You can check out their menu, or if you’re planning something bigger, they do weddings and off-site events too. There’s even a cookbook called “Simply good” with 70 recipes if you want to try recreating the magic at home. Spoiler: it won’t be the same, but it’s worth a shot. Bottom line: if you care about food that’s thoughtful and locally driven, this place earns the hype. Just book ahead.
