Fitz’s Bar is a cocktail spot in Amsterdam that leans hard into Roaring Twenties energy, minus the costume drama. It’s tucked inside the Pillows Hotel Maurits at the Park, so you get that upscale hotel bar vibe without it feeling stiff. The whole concept is built around scent: cocktails inspired by specific places, from citrus groves to spice markets, and they even have a collection of edible perfumes to start things off.
