Dagger Coffee is a specialty coffee bar and roaster in Utrecht, run by Dagmar Geerlings, who’s a multiple Dutch Barista Championship top-3 finalist. So yeah, they know what they’re doing. The vibe is less “grab a quick latte” and more “mini vacation in coffee paradise,” their words, not ours. They’re big on transparency, working with a fully traceable coffee chain and sharing the stories behind the producers, including the challenges around emancipation and building a healthy ecosystem. You can even read their transparency report if you’re into that. Beyond the bar, they run hands-on training sessions in small groups: sensory, latte art, barista, and filter workshops. You’ll use industry standard gear, and if you want to bring your own tools, just ask. Private workshops are always an option too.
