Triptyque is run by Niven Kunz and Virginie van Bronckhorst-Kunz, and it’s not your average neighborhood spot. The kitchen is built around local products, with some fresh flavors from abroad thrown in for good measure. That’s it. No fuss, just respect for the ingredients. It’s got a Michelin star, ranks 24th among the best vegetable restaurants in the world, and was named vegetable restaurant of 2026 in the Gault & Millau guide.
